La Cave du boucher, or butcher's pantry, was founded in 1931 in the Haute-Loire, the cradle of the Auvergne, a land of livestock, soil and quality.
A maturer's know-how, passed on for several generations, which knows how to reveal the best of the meat.
It all began in 1931: Jean Bessette, a butcher by profession and the son of a farmer, opened his business in Brives - Charensac, a village near the town of Le Puy-en-Velay.
About 80 years later, it is Thomas, the 4th generation, who in turn wishes to pass on his heritage and his know-how. For all these years the line of conduct has been the same: to offer the best quality.
Since 2009, Thomas has been trying to help his customers discover new flavors and offers them matured meat, "for which he is the only one who knows the preservation methods and masters these secrets to the tips of his fingers...". It is an extremely high-end meat, and tasting.
In 2017, Thomas Bessette became a Master Refiner. He creates the registered trademark La Cave du Boucher by Bessette and in the process they inaugurate their new buildings located near Le Puy-en-Velay, with an integrated store. "LA CAVE DU BOUCHER" is above all a family story. Today, we wish to please you with exceptional meats, but also to propose you innovative products with a quality followed all year long.
