The yuzu is a citrus fruit resulting from the crossing of a wild mandarin and a lemon. It is one of the most prized citrus fruits by chefs.
When ripe, the yuzu has a beautiful lemon yellow color. Slightly acidic but not too much, it is a fruit with a particular flavor and very fragrant, reminiscent of both mandarin and lemon.
Used in juice or jam, it is in zest that its perfumes are the most intense.
