Sainte-Maure de Touraine AOP is a French goat cheese made in the Touraine region. It holds the Appellation d'Origine Protégée (AOP), ensuring its authenticity and traditional production methods.

This cheese is characterized by its cylindrical shape with a straw through its center, its natural grey or blue rind, and its dense, creamy white paste. It offers delicate and slightly tangy flavors, with notes of hazelnut that develop further with aging.
